WHere is an easy interpretation of a beverage from our latest menu. This is a batch prepared mix which is packed with the tastes associated with holiday season, which makes it ideal for your holiday party. Reserve the remaining citrus syrup you can use for brunch beverages, sweets, or to mix more rounds of bikinis.
Bikini
Yields 10 servings
To make the Citrus Syrup (makes 750ml)
300ml fresh clementine juice
200ml newly squeezed lemon juice
500g caster sugar
To make the Premix (makes 850ml, serving 10)
400ml good quality vodka
100ml London dry gin
150ml peach-flavored liqueur
200ml clementine cordial (see above)
Whole cranberries, to garnish
Mandarin essential oil, as a final touch
Method
To prepare the Cordial: Combine every components inside a pan, heat until it reaches a simmer, mixing to dissolve. Then, turn off the heat allowing it to cool down fully. Pour into a sealable bottle, cap it and refrigerate it chilled, it can be stored for up to four weeks.
To make Premix: Pour every liquids into a large bottle, let it rest for 60 minutes, then pass it through best through cheesecloth, making it fully clarified.
To serve: Pour 85ml of your premix to a stirring glass filled with ice, gently stirring carefully for one minute to chill. Pour into a chilled martini glass or similar, top with a few cranberries adding the final touch by giving it a light spray of the essential oil over the top.
